Our menu items incorporate buttery French goodness with the warm Mexican intensity of chiles (the Poblano and Durango sauces). Hatch chiles go into our Santa Fe green sauce. Peruvian Aji Limo chiles go into another exquisite sauce. Our chefs cook chickens daily for the stock of our sauces. We use skirt steak for our carne asada, and real butter for our roux, not oil. Our guacamole, salsa, and our chips are all made fresh daily. Lime juice, squeezed in our own kitchen, steeps with high-quality tequila to make our spectacular margaritas.
