Cocktail: Santa Cruz 831

Ingredients:

  • 2 oz Venus No. 02 Gin
  • 3 blackberries, muddled
  • ¾ oz. lemon juice
  • ¼ oz. rosemary-honey syrup
  • ½ oz. simple syrup
  • 1 egg white
  • 1 tsp butterfly pea flower syrup (available online)

The How-To:

  1. In a cocktail shaker, muddle the blackberries and add egg white.
  2. Add gin, rosemary-honey syrup, lemon juice, and simple syrup to blackberry-egg white mixture.
  3. “Dry” shake until well mixed. Add ice and shake vigorously.
  4. Using a fresh lemon slice, moisten half the rim of your favorite cocktail glass & dip in crushed nori and sea salt. Add a large ice cube to the glass.
  5. Fine strain cocktail through sieve over large cube.
  6. Garnish with Sea Foam*, angostura bitters, fresh rosemary, and star anise.

For the Garnish:

With a spoon, gently top part of the cocktail with “Sea Foam.” Add three drops of angostura bitters, a fresh sprig of rosemary, and a star anise to the top of the glass. If desired, smoke a cinnamon stick using a bell jar to capture the essence of the forest and enhance the cocktail experience.

*Sea Foam: In a cocktail shaker, mix 1 tsp. pea flower syrup with egg white until frothy
