Recipe: Almond Poppy Seed Muffins from Flora Vista Inn

In the tiny coastal town of La Selva Beach, you’ll find the wonderful Flora Vista Inn, a historic farmhouse tucked among flowering fields near the Monterey Bay. The 1871 home — originally designed as replica of Abraham Lincoln’s home in Springfield, IL — is now a bed & breakfast run by husband-and-wife team, Ed and Deanna Boos.

The picturesque property is surrounded by acres of farmland bursting with strawberries, begonias, and calla lilies. Plus, the seemingly endless sandy shore of Manresa State Beach is less than two minutes away.

The light-filled home features five guest rooms that are named for the flowers they gaze out upon, lending the inn its apt name. A comfortable main room filled with Deanna and Ed’s great collection antiques invites lounging by the fireplace.

On warm days, you’ll want to sit outside on the shaded porch and take in the scenic countryside vista as quail scurry by.

Outside, you’ll also discover a unique highlight of the property: two tournament-quality clay tennis courts. Tennis buffs from all over the Bay Area come for the rare opportunity to play on the inn’s clay courts.

The other spot that sees a lot of action? The kitchen. It’s here that Deanna whips up all manner of delicious waffles, frittatas and breakfast pies for her guests. She pulls from the surrounding bounty, taking advantage of plums and apples grown on site as well as fresh berries from neighboring farms. Almond Poppy Seed Muffins By Deanna Boos

  • 1/2 Cup Sugar
  • 1/3 Cup Butter (melted and cooled)
  • 1 Egg (extra large)
  • 3/4 teaspoon Almond Extract (pure extract, not the imitation stuff)
  • 1/2 Cup Sour Cream
  • 1/4 Cup Milk
  • 1 1/3 Cups All-purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Baking Soda
  • 2 Tablespoons Poppy Seeds
  • 2 Tablespoons Sugar (for sprinkling on top of each muffin before baking)


  1. Beat together the 1/2 cup sugar, cooled, melted butter, egg and almond extract.
  2. Mix sour cream and milk together and add to wet mixture until well blended.
  3. In separate bowl, whisk together flour, baking powder, salt, baking soda and poppy seeds until well mixed.
  4. Pour wet mixture into dry mixture and blend together. Do not over mix.
  5. Divide batter evenly among 12 well greased muffin cups.
  6. Sprinkle each muffin with 1/2 teaspoon sugar.
  7. Bake in preheated 375 degree oven for 14 to 17 minutes or until toothpick inserted in center comes out clean.
  8. Remove from pan after resting, out of oven, for 5 minutes.
